Echizen knives are known for meticulous, long hours of processing. Mr. Totani is one of the sharpeners responsible for finishing and re-sharpening blades in Sharpening Four. Now, Mr. Totani has his own brand “HATSU”, which is a rare move among artisans in this field.
Why Sharpening Four HATSU Knives?
The blade is a double-edged blade, meaning it can be used universally without being restricted to specific ingredients, adopting the form typical of Western knives. Meanwhile, the handle follows the shape of traditional Japanese knives. This combination of the strengths of both Japanese and Western styles forms the foundation of HATSU’s first lineup: the Japanese Santoku knife.

- Maru: Round grip like its name, this knife is suitable for beginners. Handle made of zelkova wood.
- Hakkaku: A high class knife with the handle made of pagoda tree wood and added lacquer.
- Tomoe: A small knife designed to cut easily. Uses Migiwa magnolia wood handle that looks Japanese but is easily gripped like western knives. The stainless steel used for this knife will not get rusty.
