We are looking for Kurobuta (Belly and Loin) from Kagoshima or Miyazaki prefecture.
Kagoshima and Miyazaki pork are both premium Berkshire breeds renowned for their exceptional flavor and tenderness. The loin offers a balanced, slightly sweet taste with a juicy, tender texture that holds up well to grilling, pan-searing, or classic tonkatsu preparation. In contrast, the belly is richer and fattier, with soft, melt-in-the-mouth meat that becomes especially luxurious when roasted, braised, or thinly sliced for hot pot or yakiniku.
Regional differences bring subtle but noticeable distinctions. Kagoshima pork is prized for its delicate sweetness and fine-grained meat, offering an elegant flavor profile with evenly distributed fat. Meanwhile, Miyazaki pork delivers a slightly stronger umami punch, with denser meat and rich, flavorful fat that provides a satisfying, robust bite.
