In the early Meiji period, Echizen’s nakiri (vegetable cutting) knives and sickles gained a nationwide reputation for their sharpness and durability. Later, Echizen forged blades were officially designated as a Traditional Craft by the Japanese government.

Why Hideo Yamada knives?

Made with high-quality steel known as VG10 stainless steel, it offers outstanding sharpness and ease of maintenance. Each blade is hand-polished by skilled artisans, resulting in unique surface patterns resembling flowing ripples—no two knives are ever the same.

The knives are crafted by sandwiching a hard steel core between slightly softer materials on both sides, layering them like pastry dough with 16 layers per side, and then forging each knife individually. This structure prevents the blade from breaking or bending while also enhancing its sharpness. The edge retains its cutting ability without the need for frequent resharpening, and its rust resistance and durability are one of the attractive features.

Another highlight is the handle design. The center of the handle bulges slightly with a wave-like contour, creating a distinctive form. When you grip the knife, this protrusion naturally fits where your fingers curl around, making it easier to hook your fingers and providing an anti-slip effect. Thanks to this design, the knife can be held securely and comfortably, regardless of hand size or whether you are right or left handed.
